Latkes with maple miso apple sauce 30 minutes

Make latkes with just two ingredients - Potatoes and onions! The toppings are the ones that will add all of the flavour the latkes I made are topped with balsamic marinated beets and maple-miso apple sauce.

Latkes are fried potato pancakes seasoned and topped with various condiments like sour cream cheese or apples! I like fruits over savoury dishes so I opted to have apples on top.

If you don't have apple sauce at home but have a bunch of apples you can make your own. It doesn't take that much time! Just peel your apples and cut them into small cubes put in a pot and add water. Don't cover the apples make it so the waters sits just below the top layer. Mix in a splash lemon juice and bring to a boil. Lower to a simmer and cover let cook until the apples are softened. Remove from heat and mash with a fork!

For the latkes i didn't want sweetened apple sauce but i did want to add an extra taste. I like mixing miso in everything so decided to give it a go. Tested a smaller portion in a separate bowl and DAYUM but i did want to add an extra taste. I like mixing miso in everything so decided to give it a go. Tested a smaller portion in a separate bowl and DAYUM it tastes good. It's even better with a bit of maple syrup the sweet helps to make the saltiness of the miso less overwhelming. Important to note that i used white miso less salty then red miso.

The inspiration for Latkes came from Pavani from Cook's hideout. Her recipe is completely egg-free although i didn't feel the need to add flour or the 'starch' to make it hold together.

Marinated beets

  • Preheat oven to 375F. Take 2 beets and cut off the stems, scrub them clean. Rub each lightly with olive oil and wrap them in foil. Roast for an hour or until fork-tender.
  • Let cool, cut into thin slices.
  • Mix 1 1/2 tbsp of olive oil, 1/2 tsp of dijon mustard, 1 tsp of thyme, 1 tbsp of balsamic vinegar as well as a pinch of sea salt and black pepper. Whisk together until well mixed. Add beets to the marinade and let sit for 2h (or overnight, best prepared ahead). Serve at roomt temperature.

Latkes

  • Grate 2 potatoes as well as 1 yellow onion. Wrap in a cheese cloth and squeeze out excess liquid.
  • Put grated onion and potatoes in a bowl and season with sea salt and black pepper. Mix well.
  • Heat some oil at medium heat in a non-stick pan, when hot add 1/4 of the mixture and flatten with a spatula. Fry until bottom is golden and crispy. Flip and repeat.

Apple sauce

  • Mix 1/4 cup of apple sauce with 1 1/2 tbsp of white miso and 1 tbsp of maple syrup. Stir to mix.
  • Serve marinated beets over latkes with apple miso sauce with thinly sliced scallions
