Mango sesame rice pancakes 20 minutes

Worry not that gooey yellow mass is not cheese. It's pureed Mango! HO YES...! Black sesame rice pancakes with a generous dollop of mango because sometimes we all need a break from maple syrup.

Made matcha rice pancakes for Devine a few days go since I made a double recipe we ended up having some extra left-over. It doesn't keep that well so i figured we could just eat it that same night. We usually just have fruit for dessert so i paired the remaining 2 pancakes with a bit of fresh mango and MAN! Tasted so damn GOOD together!

SO inevitably I made it into a recipe except i didn't want to make matcha flavoured pancakes again so i opted for black sesame :)! The nutty taste of sesame paired with mango is so flavourful neither are excessively sweet too. I'm not too fond of really sugary desserts dressing pancakes with maple syrup is quite good but afterwards i always feel like my heart is going to burst right out of my chest alien-style.

Using fruit instead of syrup is a good way to cut down on sugar. It didn't need it really mangos are quite good and sweet on their own.

You can see in the photos that not all of the pancakes are the same size so this roughly makes about 12-10 small ones.. or a few bigger ones. Making them the same size is boring anyway IM NOT A ROBOT.

rice flour1 cupbaking powder1 tspblack sesame seeds1/4 cupwhole cane sugar1 tbspsoy milk1 1/4 cupvanilla extract1 tsp

Pancake

  • Heat 1/4 cup of black sesame seeds in a non-stick pan at medium heat, remove once they start to pop. Let cool, then crush into a powder with a mortar and pestle. As much as you can, it'll just make it a bit easier to mix afterwards
  • Stir 1 1/4 cup of soy milk and 1 tsp of vanilla extract together, add 1/4 cup of ground black sesame seeds and blend using an immersion blender until you get a smooth grey liquid.
  • Mix 1 cup of rice flour, 1/4 tsp sea salt, 1 tsp of baking powder and 1 tbsp of whole cane sugar together. Pour wet ingredients into the dry ones and mix until smooth, make it as lump-free as you can.
  • Add some oil to a pan at medium heat, spoon a portion of batter into it. Flip once the bottoms have browned and little bubbles appear at the top.
  • Repeat for the rest of the pancake mix.

Topping

  • Scoop flesh out of the mango, puree with an immersion blender. Serve over pancakes!
