Tempeh is a soy product, made from fermented soy beans. It's a source of protein, Omega-3's and zinc, and has a firm texture and earthy flavor.

Tempeh is made by controlled fermentation, the fungus Rhizopus Oligosporus (used as a starter) binds soybeans into a tight 'paddy'. Because it's a fermented food, eating tempeh increases iron absorption in foods.
