Sesame oil is an edible oil derived from sesame seeds. It is used as a cooking oil, but also as a flavor enhancer because of its nutty aroma and taste. Light sesame oil has a high smoking point and is suitable for deep-frying, while darker varieties are used for stir-frying or sauteing food. Sesame oil is sometimes mixed into very hot and spicy food to help neutralize the heat.
Sesame oil, as is the case for most cooking oils, isn't essential to good health and should be used sparingly.
